4 eggs 180 gr sugar 2 avocados Juice of half lemon 50 ml virgin olive oil 220 gr flour 16 gr / sachet yeast Icing sugar to sprinkle on top
1. Mix eggs and sugar in bowl 2. Take avocado flesh and crush with fork, adding lemon juice 3. Add olive oil to the avocado mixture and mix into bowl with eggs and sugar, using spatula 4. Add flour and yeast, and mix into avo paste with spatula 5. Pour into greased cake tin and place in pre-heated over at 180C for 40 minutes 6. Take out of oven and tin, wait until it cools and then sprinkle with icing sugar.
